Cold Blueberry Cobbler ala Mode
Eating this cobbler cold was surprisingly refreshing and hearty all at the same time. I found a great deal on blueberries and felt inspired to build this cobbler. The ingredients include 2lbs blueberries, oats, dark brown sugar, turbinado sugar, sliced almonds, a small amount of black strap molasses, olive oil, whole flax seeds (processed would have been good as well). I combined all of the ingredients, except the blueberries and turbinado, in a bowl. Then in a separate bowl I combined the blueberries and sugar. I sprayed a large casserole dish with cooking spray and then I layered the oat crumble and the blueberries. I baked the cobbler at 400F for about 45 minutes. I ate some last night while it was warm. It was wonderful, but when I came back later for seconds and the cobbler was cold, I decided to drizzle very cold coconut milk over the top. It was chewy and sticky, creamy and cold. I loved it.
